The genetics

Any self rabbit carrying non-extension (ee). The base colour determines which tort you get. Black tort is the black version, blue tort the dilute, chocolate tort the brown, and lilac tort the dilute brown.

What a good one looks like

Ask a breeder which tort they mean. "Tort" on its own is not a colour, it is a category, and a seller who cannot tell you whether the rabbit is a black tort or a blue tort does not know their own line.

Is tort actually rare?

Torts as a group are the most common thing in the breed. The individual variants differ, and chocolate tort and lilac tort are both genuinely uncommon.
